VINTAGE CONDITIONS

The 1994 vintage in Coonawarra was excellent. Warm and mild days throughout the growing season resulted in yields well balanced with vine canopies. A long dry Indian summer through to early May ensured that the grapes were harvested at full ripeness with strong colour, intense varietal character and balanced structure

April 19 to May 5, 1994.

WINEMAKING

The grapes for Jacaranda Ridge were sourced from a number of premium Coonawarra vineyards, each selected for the character offered to the final blend. The grapes were harvested over a range of ripeness, then fermented on skins at 20-25ºC for periods averaging seven days, with some parcels receiving extended skin contact beyond the completion of fermentation.

A final selection of superior wine was made from the individual vineyard parcels before blending. The wine was matured in new small French oak casks in temperature controlled cellars for 33 months before final blending. Several times during maturation the wine was racked from the casks and returned. 1994 Jacaranda Ridge Coonawarra Cabernet Sauvignon received a further 16 months bottle maturation before release.

COLOUR

Full depth. Deep crimson red.

BOUQUET

An intensely powerful bouquet of cassis berry Cabernet Sauvignon fruit with rich spicy oak complexed with bottle maturation notes.

PALATE

Full bodied with intense cassis and chocolate fruit notes. A rich berry middle palate melded with soft, mature grape and French oak tannins carries the wine to a lingering balanced finish.

ASSESSMENT

1994 Jacaranda Ridge is an elegant dry red displaying the outstanding varietal characteristics for which Coonawarra Cabernet Sauvignon is famed. If cellared correctly, this wine will continue to develop with further bottle age for many years.
