VINTAGE CONDITIONS The 1994 vintage in Padthaway was excellent. Warm and mild days throughout the growing season, coupled with a long dry autumn, ensured that the grapes were harvested at full ripeness with strong colour, intense varietal characters and balanced structure. HARVEST DATE May 3, 1994. WINEMAKING 1994 Lawson’s was vintaged entirely from Shiraz grapes from the original 2.8 hectare vineyard planted in 1968 at Padthaway. The vineyard is situated on the shoreline of an ancient seabed and the soils are deep free-draining sands. The sands partially stress the vines, giving rise to low yields of grapes that achieve full ripeness. The grapes were destemmed and crushed to fermenters with active yeast culture. The grapes were fermented at moderate temperatures (20-22ºC) with peaks of higher temperatures early during the fermentation. The wine received extended skin contact to give maximum extraction of colour, flavour and tannin. Upon pressing the wine from the skins, the pressings fraction was blended with free run wine after clarification. The wine was matured in new American oak hogsheads in our cellars for 18 months, after which it was given the minimum filtration and stabilisation before bottling. The wine received a further 22 months bottle maturation before release. ANALYSIS Alcohol: 14.0% alc/vol Total Acid: 6.6g/L pH: 3.56 BOTTLING DATE November 4, 1996. COLOUR Full depth.
