VINTAGE CONDITIONS The 1994 vintage in Coonawarra was excellent. Warm and mild days throughout the growing season, coupled with a long dry autumn, ensured that the grapes were harvested at full ripeness with strong colour, intense varietal characters and balanced structure. HARVEST DATE. April 19 to May 5, 1994. WINEMAKING St Hugo is sourced from a number of vineyards, each selected for the characters it offers to the final blend. The grapes were harvested over a range of ripeness and fermented on skins at 20ºC to 25ºC for periods averaging seven days, with some parcels receiving extended skin contact after the completion of fermentation. Throughout maturation, the individual integrity of the vineyards wines was maintained and a final selection of superior wine was made before blending. The wines were matured in new and one year old small French oak casks in our cellars for 18 months before final blending. Prior to the final blending, the barrels underwent rigorous selection with only those of superior quality being chosen for the final blend. The 1994 St Hugo Coonawarra Cabernet Sauvignon received a further 18 months bottle maturation before release. ANALYSIS Alcohol: 13.5% alc/vol Total Acid: 6.2 g/L pH: 3.47 BOTTLING DATE February 19, 1996. COLOUR Full depth, deep crimson red. BOUQUET An intense bouquet of ripe blackberry and cassis fruit complexed by spicy oak nuances and chocolate cedar development. PALATE Rich, ripe concentrated fruit supported by soft grape and oak tannins, leading to a long, fine finish. ASSESSMENT An excellent St Hugo which, while drinking superbly now, will develop further complexity with medium term cellaring.
