Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - perfect balance between fruit and oak, to produce a wine with rich varietal characters and cellaring potential. The long Indian summer and late season in 1994 produced good quality Cabernet and Shiraz in South Australia. Carefully selected premium quality fruit together with 16 months in American oak have produced a classic wine in the traditional Bin 389 style. Vineyard Region Coonawarra, McLaren Vale, Barossa Valley Grape Variety Cabernet Sauvignon, Shiraz (Syrah) Maturation Matured in new, one and two-year-old American oak barrels for 16 months, including all those that held the previous vintage of Penfolds Grange. Winemaker Comments: Phillip John Colour Strong deep red in colour with hints of purple on the rim. Nose Left standing, the complex bouquet stirs slowly revealing sweet berry and ripe plum Cabernet, mixed spices and chocolaty varietal fruit aromas, coupled with a superb foundation of coffee and vanillin oak. Palate The palate is unmistakably Penfolds, with its full bodied structure and complex, rich flavours featuring lusciously ripe berry, plum and dark chocolate fruit, complexed with coffee bean and generous soft rounded tannins. The wine displays delicious, textured, mouth filling flavours and excellent palate length with lingering fruit and oak characters.
