Wine Making Notes

The grapes were harvested in mid to late April 1997. Very little rain during harvest resulted in the wine reaching high colour and sugar levels. After picking the must was cold macerated on skins for 48 hours before yeast inoculation. Fermentation was maintained for 8-12 days at 22°C and was "headed down" to keep the skins in contact with the juice at all times. 60% of this wine finished fermentation in new French and American oak, and was oak matured for 12-18 months prior to bottling in December 1998
Alcohol by Volume: 13.5 %
