The Fruit: This single-vineyard wine is made exclusively from 55-year-old vines grown on the rich, volcanic soils on the Mount Pleasant Rosehill Vineyard, located in the foothills of the Brokenback Range in the lower Hunter Valley.

Early spring rain resulted in a good even budburst. The growing season was cool to mild ensuring the development of lovely refined fruit flavours. The grapes were picked in February.

Vinification: After crushing, the must was cold macerated prior to fermentation. Throughout the eight day fermentation the cap was submerged and the juice was pumped-over under strict temperature controlled conditions. The blend was then pressed and barrel-fermented in new American oak barrels where it remained for 15 months maturation prior to being bottled.

Tasting Note:

Colour: Crimson hues.

Bouquet: Lifted leather, tar and violets integrate with delicate clove and spice, supported by developed cedar and cigar box bottled aged aromas.

Palate: An elegant but full-bodied fine wine featuring red cherry primary fruit and developed leather and chocolate, typical of the Hunter Valley region.

Chef Peter Howard’s Food Suggestions: Ideal with de-boned quail infused with thyme and garlic or a chicken and peach salad with a light curry dressing.

Cellaring: This wine can be enjoyed now or will cellar well for up to 10 years..

Alcohol by volume: 13.5%
