VINTAGE CONDITIONS Ideal climatic conditions leading up to the 1997 vintage ensured balanced fruit set and consistent ripening patterns. A brief heat wave in late February delayed harvest and as a result the fruit had elegant berry flavours and balanced tannin structures. HARVEST DATES Mid March, 1997. WINEMAKING Once harvested, grapes were destemmed and crushed to static and rotary fermenters. Regular pump overs ensured maximum extraction of colour, flavour and tannin and assisted in maintaining fermentation temperatures between 20 to 25ºC. Selected parcels of wine completed fermentation in barrel. Pressings, initially kept separate, were balanced back with the drainings after clarification. Several parcels underwent malolactic fermentation in oak barrels, the remaining wines were partly clarified on completion of malolactic fermentation, and allowed to mature in new American oak hogsheads for 18 months. ANALYSIS Alcohol: 13.5% alc/vol Total Acid: 6.4 g/L pH: 3.51 BOTTLING DATE March, 1999. COLOUR Full depth ruby red with vibrant crimson hues. BOUQUET Full intensity, perfumed with rich plum, complemented by cinnamon oak. PALATE Full, ripe plum, elegant tannins with pepper spice and coffee, vanillin oak.
