Traditional Cabernet Sauvignon Merlot Petit Verdot 1998

Traditional, full bodied red wines have been fermented and matured in the cellars of our Ryecroft winery since 1888. The intimate knowledge acquired over generations of local viticultural experience contributes to the unique flavour and quality of McLaren Vale grapes. Since purchasing the Ryecroft vineyard and winery in 1991, we have continued to produce a wine which employs the 'Traditional' winemaking techniques of warm fermentation in small, open vats, followed by extended maturation in oak barrels. Drawn from vineyards across McLaren Vale, the fruit is selected for its premium quality and track record of excellence.

Vintage Conditions

Late winter showers in August facilitated an even budburst, flowering and fruit-set. The lack of really hot weather and frequent cold nights fixed acid, tannin and colour stability. Hotter weather in mid-March  oncentrated fruit flavours and accelerated final ripening.

Cabernet Sauvignon, Merlot, Petit Verdot

Maturation

The fruit was warm fermented using small wax lined open vats to encourage the extraction of soft, ripe tannins. The separate batches underwent 18 months maturation in American oak.

Colour

1998 Traditional shows a full, deep ruby colour.

Nose

The aroma is densely packed with ripe cassis-like fruit characters, underlaid by complex secondary notes of black olive and smoky hints of toasty American oak.

Palate

The palate is ripe but characteristically firm showing the generous tannin structure of Cabernet Sauvignon. The finish is long and complex, with the richness of primary fruit beginning to yield to the hints of wood-smoke and chocolate which characterise maturity and will develop further with time.
