The Amadeus is made to express the best from our part of the Adelaide Hills, and to be shared with food. If the famous phrase “an iron fist in a velvet glove” continues to be applied to this wine we know we have done our job in maintaining the Amadeus style. Low yields in 1999 ensured full maturity for our flagship Cabernet Sauvignon; the seventh Amadeus released. The rich flavours soften slightly with some bottle age to produce the seamless characters that are so appealing.

Colour - Very deep brick red

Nose - The violet scented, leafy, dark berry aromas (especially mulberry) hit initially, followed by some blackcurrant cassis, with a little minty and cedary cinnamon overtones. The subtle sweet oak nuances are supportive of the appeal of the bouquet which is a typical cool climate sourced Cabernet.

Palate - This blackcurrant and dark chocolate charged Amadeus is refined though full bodied in structure. The fresh coffee and dry, dark chocolate flavours are well balanced and the soft, fine and cedary tannins are submerged in the total balance of the wine. Elegance with richness of flavour and structure summarises this wine.

Maturing details / winemaking: A wine that can be enjoyed now or improved with bottle age, and at any time with breathing and/or decanting.
