Ingoldby Wines was established by Jim Ingoldby in McLaren Vale in 1973. Since that time, Ingoldby wines have made a succession of award-winning wines in the traditional way big, bold and generous. Shiraz is well suited to the area with wines displaying great colour and flavour development. This is only the second vintage of the Ingoldby Reserve Shiraz and show cases best in regional and varietal character. Only very limited quantities were made. Winemaker’s Comments: The 1999 Ingoldby Reserve Shiraz is the product of a cooler summer showing more finesse than the 1998 vintage. The colour is deep, almost black with a complex aroma of ripe berry fruits supported by good French oak. The structure is big with flavours of dark cherry, plums and licorice. Firm dry tannins support these flavours. Winemaker: Charles Hargrave Suggested food: Wild Duck Ragout on egg fettucini Cellaring : Will cellar for up to 10 years. Viticulture: Selected parcels of fruit were sourced from premium McLaren Vale dry grown vineyards including the Ingoldby vineyard in McLaren Flat and other growers in the Willunga area. The fruit was picked in early March, prior to the rain over vintage. Fruit was selected for its intense colour, flavour and natural tannins. Vinification: Prior to fermentation a small parcel of fruit was cold macerated to extract colour and fine tannins. After pressing the wine was matured in predominantly new French oak with a small portion in seasoned American oak.
