Fruit for this wine was ‘hung out’ until late vintage when warm northerlies from Central Australia produced ideal conditions for completion of ripening. Picked at 13.7 baume the fruit was fermented for 5 days on skins then fermented in new AP Johns American Hogsheads and Seguin Moreau Russian barriques. Bottling was in December 2000.
Winner of the prestigious Jimmy Watson Trophy, this wine displays intense dark crimson colour with purple highlights. Typical Coonawarra cool climate aromas of blackberry fruits with aniseed, black pepper and Indian spices are present. The intense fruit is framed with fine mocha and chocolate oak with a touch of mint. Rich and dense on the palate the strong tannin backbone leads to a firm and structured finish. |
