Excellent winter rains provided ample soil moisture ensuring healthy spring growth and berry development for dry land Shiraz vineyards in the Barossa Valley. A warm to hot summer accelerated grape maturation, promoting easy ripening with rich, robust and ripe flavours.Individual blocks were assessed by the winemakers throughout the ripening period, with harvest being determined when flavour, intensity and acid balance were in harmony, to show the true flavour of Barossa Shiraz. THE VINEYARDS Mature vineyards in the Gomersal, Lyndoch, Rowland Flat, and the Eden Valley subregions of the Barossa were selected for grapes with excellent depth of flavour and colour. Soils in these blocks were predominantly red brown earths on the valley floor and Barossa ranges schist in Eden Valley. HARVEST DATES Late March to mid April BAUMÉ AT HARVEST 12.8º - 13.5º Baumé VINIFICATION AND MATURATION Grapes were hand and machine harvested, before being destemmed and crushed into Potter fermention vessels and inoculated with an active yeast culture. The ferments were pumped over twice daily to the wet skin ‘cap’ for maximum extraction of colour, flavour and grape tannin. Temperatures ranged from 17ºC to 22ºC throughout ferment. Some parcels of fruit underwent partial barrel ferment in new American oak barrels. Following draining and pressing, the freerun portion and the pressings were combined after clarification through a centrifuge. Malolactic ferment proceeded both in barrel and tank before being racked and transferred to new and one year old American oak hogsheads made by French and Australian Cooperages. Following 15 to 18 months oak maturation in temperature controlled cellars, the final blend was selected to produce a full flavoured robust style of Barossa Shiraz. BOTTLING DATE 21st February, 2001 ANALYSIS Alcohol 13.5% alc/vol Total Acid 6.5 g/L pH 3.45 COLOUR Deep ruby red BOUQUET Aromas of spice, chocolate and vanilla, derived from oak maturation add interest and complexity to the plum and berry fruit. Unmistakably Barossa Shiraz PALATE Rich, concentrated palate, sweet berry fruit intertwined with spice and vanilla. Fine tannins throughout support the fruit flavours adding length.
