Briarston 2000 Coldstream Hills Briarston is a blend of Cabernet Sauvignon and Merlot. The wine is designed to be consumed now, without any compromise to it's aging potential, which is up to 5 years from release. The components were kept separate for over a year before the final blending decisions were made, based on each variety's development and strengths. The 2000 Briarston was matured for fourteen months in French oak, further developing the flavours and structure of the wine. The winemakers at Coldstream Hills believe that the 2000 Briarston is the best to date. Vineyard Region Yarra Valley Vintage Conditions The growing season started extremely well, with the ideal amount of warmth and sunshine for the late ripening reds. In addition a good supply of rain kept the vineyards perfectly quenched, just enough to develop some beautiful spicy fruit characters, evident in drinking the 2000 Briarston. Vintage went well, producing red grapes of an exceptional quality. Grape Variety Cabernet Sauvignon, Merlot Maturation 14 months in a combination of new and used French oak barriques. Winemaker Comments: Andrew Fleming Colour Bright red- purple. Nose A fragrant array of spice, cedar, olives, leaf and earthy/dusty Cabernet aromas. Palate Dominated by ripe, red berry fruit with a hint of fleshy mid-palate from the merlot component, with a hint of bitter chocolate. Pronounced but fine tannins give the wine and excellent structure and texture.
