The fruit for this premium Shiraz was picked from Grant's vineyards and those of respected premium growers in the Barossa. With an excellent growing season the fruit was allow to development maximum varietal Shiraz characters and concentration of flavours. The wine was fermented in small batches, with some juice left on skins after primary fermentation, to develop a complex structure and flavour. A portion completed fermentation in American oak and the balance matured in new, one two and three year old American and French hogsheads for 18 months. The wine is deep red in colour with youthful purple hue and exhibits a intense nose of complex aromas. Red berry fruits are prominent complimented by stewed plums, spices and subtle white pepper with toasty oak and earthy notes. The palate is soft and generous with flavours of rich berry fruits, earthy spices, and firm tannins providing full-bodied weight and excellent length. A perfect accompaniment to rich full flavoured dishes such as rare roast lamb with roast potatoes with thyme and seasonal vegetables.
